Instructions
1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray.
2. In a pan, heat olive oil over medium heat. Sauté garlic and onion until fragrant (about 2 minutes). Then add the mushrooms, bell pepper, and zucchini; cook until softened (about 5-7 minutes). Stir in spinach until wilted. Season with salt, pepper, and Italian seasoning.

5. Repeat layering: add marinara, noodles, remaining vegetables, ricotta, and mozzarella. Top with the final layer of noodles, remaining marinara, and sprinkle with Parmesan cheese.
